Tejas (teh-has) – a unique fusion of Australian fruit and nuts and Peruvian manjarblanco covered in luscious Belgian Callebaut chocolate.
 
 
 
The heart of these treats is our traditional manjarblanco, a soft and creamy delicacy made of milk, vanilla beans and sugar gently simmered for a few hours until it reaches its signature heavenly texture.
 
 
 
My recipes have not been handed down from generation to generation. They have evolved as a result of inspiration from my combined heritage and the blending of the best natural ingredients from Australia and Peru.
 
 
 
A traditional sweet of Ica, Tejas depict the mystery and romance of Peru's colonial heritage. South of Lima and known as "the land of heaven", Ica is a wonderful destination where you can indulge yourself with fine Pisco and an assortment of irresistible Tejas.
 
 
 
Ica holds a very special place in my heart, having spent a great deal of my childhood in the valley of Ica at my family's hacienda. That's why it gives me so much pleasure to share these traditional treats with you.
